Lenten Meatless Corner===

Well, it's day two and I made it meatless yesterday, with meatless chili and a couple of veggie burgers and an omlette. Right now, 39 days ahead of me seems long---need some helpful ideas on menu.

Anyone who wants to post the day by day victories in the meatless journey, with recipies and thoughts, just post on comments.

    Black bean burgers for dinner tonight. They really are tasty. 39 days will go really fast. I've been going meatless for 3 weeks and its gets easier as you go. I'll post some recipes later.

    Black Bean Burgers
    1-16 0z. black beans drained
    1/2 green pepper diced
    1/2 onion chopped
    3 cloves garlic chopped
    1 egg
    1 TBSP chili powder
    1 TBSP cumin
    1/2 cup bread crumbs

    Mash the beans with a fork till pasty. Add green peppers, onions, garlic, bread crumbs,egg and spices. Mix and form 4 patties. Fry in olive oil until browned on each side. Serve on bun as a burger. You can top with Salsa, cheese and sour cream or anything you eat on a burger.

  3. 40 days could be an eternity. Clean so far. Omlette this morn. Substituting candy bars for beef, preferring baby ruth.....

    It has been one full week of meatless meals - 3x's a day. I have had fun this week shopping and trying new recipies and new foods. One thing I noticed is that I spent a LOT of money on the first shopping trip getting foods and spices that were new to us.

    I am using Cooking Light magazine for ideas AND plan the recipies a week ahead.

    Tonight it was fish fillets, cooked spinach and a Candied Walnut,Pear, and Leafy Green Salad.

    Ingredients for the salad:
    1/3 cup sugar
    2/3 cup chopped walnuts
    Cooking Spray
    1/2 tsp kosher salt, divided
    2 TBSP white balsamic vinegar
    1 1/2 tsp Dijon mustard
    3 TBSP extrqa-virgin olive oil
    1 TBSP capers, chopped
    4 cups torn green leaf lettuce
    4 cups chopped romaine lettuce
    4 cups chopped radicchio
    1 ripe red Anjou pear, thinly sliced
    1/4 tsp freshly ground black pepper

    1. Place sugar in a small, heavy sauce-pan over medium-high heat;cook until sugar dissolves, stirring gently as needed to dissolve sugar evenly (about 1 min). Continue cooking 1 minute or until golden (do not stir). Remove from heat; carefully stir in nuts to coat evenly. Spread nuts on a baking sheet coated with cooking spray; separate nuts quickly. Sprinkle with 1/4 tsp salt. Set aside until cool; break into small pieces.

    2. Combine vinegar and mustard, stirring with a whisk. Gradually add oil, stirring constantly with a whisk. Stir in capers.

    3. Combine lettuces and radicchio; top with pear and candied walnuts. Drizzle dressing evenly oveer salad; sprinkle with remaining 1/4 tsp salt and pepper. Toss gently to combine. Yield: 8 servings(serving size about 1 cup)

    Red Soup
    1 red bell pepper diced
    1 red onion chopped
    1 garlic clove diced
    2 TBSP oil
    1-14oz.can diced tomatoes
    4 cups stock
    1/4 cup rice
    2 TBSP worcester sauce
    15 oz. red kidney beans
    1 tsp. oregano
    1 tsp. sugar
    salt and pepper to taste
    shredded cheddar cheese to garnish

    Saute peppers, onion and garlic in oil. Heat until sizzling, turn down and cook 5 minutes. Add rest of ingred. ( except cheese). Simmer until rice is cooked. Garnish with cheese( if desired) and serve.
    Made this for dinner tonight and it was very delicious. Hope you enjoy.

    Just checking in to see how the meatless lent is going? Hopefully no trips to any fast food places for a juicey burger. So far its been pretty easy, but I must admit last night as I was eating cheese pizza, that the pepperoni slices on my grandson's pizza looked pretty good. But I did control myself and didn't eat any.

    The snowbirds are doing fine with the meatless cuisine in the sunny regions. There are wonderful seafood dishes in Florida and the only challenge in the sausages at breakfast which are always turned away. The Florida fish are low in mercury if fished here, so no problems there.

    Today is Holy Saturday and Tomorrow, Easter Sunday is the end of our meatless fast. However, we want to continue eating meatless, so tonight we are having Catfish and tomorrow maybe Scallops.

    The catfish resipe goes like this:

    1 onnion finely chopped
    1/ cup honey Dijon mustard
    4 (6 oz) fillets catfish fillets
    garlic salt and pepper to taste
    dried parsley flakes

    Directions:
    1. Preheat oven to 350 degrees F
    2. In a small bowl, mix together the onion and mustard. Season the catfish fillets with garlic salt and pepper. Place on a baking tray and coat with the onion and honey mustard. Sprinkle parsley flakes over the top.
    3. Bake for 20 minutes in the preheated oven, then turn the oven to broil. Broil until golden, 3 to 5 minutes.

    All of you folks who keep saying you are going "meatless" please do realize that fish and other sea creatures are meat. You are not truly going "meatless" unless you cut out all animal meat - not just the ones with feet!
    Just two cents from an Evansville resident vegetarian!
